How far in advance should I book?

We recommend booking anywhere from 2 months to 3 weeks before your event, especially during busy seasons and holidays. That said, if your event is coming up sooner, reach out. We'll always do our best to make it happen.

How much food should I order?

We'll help guide you based on your event style, guest count, and menu selections.

For buffet-style events, we typically recommend about 1/3 pound of meat per person since guests tend to sample a little of everything. As a general guideline, one half pan of sides will serve approximately 30 guests in a buffet setting.

For plated or made-to-order serving experiences, we usually recommend about 1/2 pound of meat per person. Because portions are typically larger and more consistent, a half pan of sides will generally serve around 15 guests.

Our goal is simple: make sure everyone leaves full and happy.

What sauces do you offer?

All meats are served with sauces on the side so guests can customize their plate to their own taste and heat preference.

Our available sauce options include:

  • Sweet BBQ – A rich, sweet barbecue sauce that is always a crowd favorite.
  • Spicy BBQ – A bolder sauce with a little heat and extra kick.
  • Carolina Mustard – Tangy and mustard-forward with a touch of sweetness.
  • Carolina Vinegar – A light, vinegar-based sauce with a peppery finish, especially popular with pulled pork.
  • Buffalo – Bold, tangy heat that pairs perfectly with chicken and smoked wings.

Good to know:

  • Sauces are included with all catering orders.
  • Multiple sauce selections can be provided for larger events.
  • Additional sauce portions are available upon request.
  • We serve sauces on the side so guests can choose their favorites and accommodate different tastes across the group.
Do you provide setup and teardown?

Yes. For staffed events, we can handle setup, replenishing food throughout the event, and teardown afterward.

For drop-off catering, we can:

  • Deliver and setup food
  • Provide and set up disposable chafers and serving equipment if purchased
  • Or simply drop off the food if you prefer to handle setup yourself
Do you provide serving staff?

Yes. Serving staff is available for events of all sizes.

For events with 100+ guests, we highly recommend staffing support to help with setup, replenishing food, assisting guests, and teardown throughout the event.

For a more interactive experience, we also offer:

  • Slice-to-order meat service
  • Smoker setup onsite for added rustic ambiance and BBQ aroma
How far do you travel?

We regularly cater events within a 40-minute radius of Oak Park, Michigan.

For larger or specialty events outside that area, we're happy to discuss travel and accommodation considerations on a case-by-case basis.

What size events do you cater?

We cater everything from small family dinners to large weddings and corporate events.

Our events typically range from 5 to 400 guests, and we can help recommend the best service style based on your event size and needs.

Please note that orders under 5 pounds of meat are typically too small for catering service.

Do you offer holiday pickup meals?

Yes. We offer holiday catering and pickup meals throughout the year, including:

  • Thanksgiving
  • Christmas Eve
  • Easter
  • Fourth of July
  • New Year's Eve
  • New Year's Day

Holiday menus and ordering details are available seasonally, and you can be added to our email list to be notified when ordering opens.

What is required to reserve a date?

A 50% non-refundable deposit is required to secure your event date.

Once your deposit is received, your date is officially locked in and we begin planning your event. We understand that guest counts and menu needs can change, so in some cases we may allow quantity adjustments after the deposit is made. Please contact us to confirm the cutoff date for any increases or decreases to your order.

Final payment is due the day after the event.

What is included with catering?

All catering orders include:

  • Your selected meats and sides
  • BBQ sauce
  • Serving utensils

Additional items such as eating boats and individual utensils can be added to your order if needed.

If you need help with beverages, let us know. We can coordinate beverage purchases for your event, but in most cases we recommend handling beverages yourself since we would typically be purchasing the same items you would and adding a service charge.

How quickly will I receive a quote?

We typically respond to inquiries within 2 business days.

The more details you can provide about your event, such as date, location, guest count, and service style, the faster we can build an accurate quote.

Do I need serving staff for my event?

Not necessarily.

Many smaller events work great as drop-off catering. For larger events, especially those with 100+ guests, we recommend staffing to help keep food stocked, assist guests, and handle cleanup.

Keep in mind that adding serving staff will significantly increase the per-person cost of your event, so it's important to weigh the added convenience and guest experience against your budget.
